I thought it was "Establish superiority."

If they can coinvince you they are the finest chefs on the planet (they're
not; the Belgians are, but they do it without condescension or
pretensiousness), then they can serve whatever rubbish they like, cooked as
badly as they like, secure in the knowledge that you will not squeak about
it because you have been thoroughly intimidated.

(The above is a succinct summary (don't start me on it... :-)) based a
number of painful experiences in French restaurants and aircraft... These
days I would hitch hike before I'd goAir France, and I drive through France
as quickly as possible so I can enjoy dinner in Belgium.)
