Very difficult to re-produce a vision of your world while in mine.
Let's try.

In my song template I have a pre-established "Inst 1". You can
right-click the text title of any channel in the "Arrange" windown and
select it as an Audio > Audio Instrument > Inst 1.

I then open the Mixer window, find "Inst 1", and left-click/hold the
first empty box under the I/O text for that instrument and select
Stereo > Logic > EXSP24. EXSP24 opens and displays an editing screen
for selection/editing a soft-synth. (Ensuring "Bypass" is not
selected, which it isn't by default) I can doodle on a keyboard and
hear a syne wave sounding. No instrument has been selected yet. In
the top right-half of the panel there is a little elipses (...)
displayed awaiting a selection of the instrument. I left-click/hold
this and select Piano > Electric Grand. I doodle with piano.

I go back to the arrange screen and record. It records. It plays back.

The reality? It took about 30 minutes for me to walk through this
"example", having upgraded from Logic 6 Pro Bronze or some such to
Logic7X. I mostly "pulled wire" (as I refer to messing with hardware
mixer settings, headsets, speakers, et al) and tried to figure out what
I had last gimped up between mixer, sound panel, and all the rest.

I opened and fussed with, but in the end never changed settings in the
Midi Audio Setup. And almost everything else. The Sound Setup in the
System Preferences panel always causes me hassles by feedback between
computer-mixer-computer because of my wiring a mixer directly into the
G4's audio input, until I remember to set Input Volume to zero in
System Settings. And so forth.

Once all was working properly again, I then re-entered Logic Express,
used the same template and produced exactly the example above. I had
made no changes to preferences or configuration of Logic proper. I
assume if this does not work for you, you might need to "pull wire"
with your audio system, but if all other sounds are being generated and
sounding appropriately. Initially mine was not, including even my midi
keyboard straight out to the computer speakers initially.
