If you don't know the difference, why do you want to use these particular
wikis in preference to the many others?

I know dokuwiki but my work's friend think that Twiki is more famous and
it is better... but he don't know it.
So I have to learn about both.
Thanyou for answering me.

It's kind of hard recommending one product over another without a detailled
understanding of requirements and and context (which isn't going to happen
in a newsgroup discussion). I had a brief look at these and a couple of
other wikis sometime ago, but the decision I made may not be appropriate to
what you are doing.
You have to decide whether your knowledge of Twiki is more valuable than the
functionality / reliability which might be available elsewhere - along with
the cost of acquiring skills in the other product. For what it's worth, if
someone asked me to recommend a Wiki without any contextual information I
would have pointed them towards mediaWiki. OTOH I think Twiki's
out-of-the-box structure and development APIs make it an interesting
candidate as a collaborative tool.
